When I visited New Zealand last I stayed with some of my Kiwi friends which was where I first saw this marvelous creation. I couldn’t believe just how simple, easy and fun this was to make. It is essentially a caramel-brown coloured log, covered in coconut and containing lollies inside. Needless to say it was delicious so I wrote down the recipe to make at home.
I had difficulty finding Pascal eskimos back home in Australia so I substituted them with marshmallows and banana lollies and it tasted just as good. However, just recently I have found them in the international food section of the supermarket along with another New Zealand favourite: the L&P drink.
So I would like to share with you the recipe I brought home with me and strongly recommend you give it a go. And maybe you could wash it down with some L&P 🙂
